Mackerel Fillets with Grilled Red Pepper

Prep: 15 minutes | Cook: 8 to 10 minutes

INGREDIENTS

  • 1 1/2 pounds mackerel fillets
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Grilled Red Pepper Salsa

PREPARATION

  1. Prepare a hot fire. Arrange mackerel fillets in a single layer in a glass or ceramic dish. Brush with lemon juice and olive oil. Season with salt and pepper.
  2. Set fish skin side up on an oiled grill set 4 to 6 inches from coals. Grill, carefully turning once with a wide metal spatula, until fish is just opaque throughout but still moist, 8 to 10 minutes. Top each fillet with a spoonful of Grilled Red Pepper Salsa and pass the remainder on the side.
