Pepper Cucumber Salad
Ingredients
- 4-5 Persian cucumbers, cut into rounds
- 7-8 mini peppers, sliced into rings
- 2 large carrots, cut/peeled into ribbons or cut into small pieces
- 1 medium shallot, thinly sliced
- 1/4 cup Asian miso ginger dressing, any brand
- 1 tbsp chili crunch oil
- 1 tbsp everything bagel seasoning
Instructions
- Add all of the chopped veggies to a large bowl.
- Pour the dressing over the salad and toss to coat.
- Add the chili oil and bagel seasoning and toss everything together.
- Top with more bagel seasoning, if desired, and serve right away or chill for 1 hour, toss again, then serve.
