  • 4-5 Persian cucumbers, cut into rounds
  • 7-8 mini peppers, sliced into rings
  • 2 large carrots, cut/peeled into ribbons or cut into small pieces
  • 1 medium shallot, thinly sliced
  • 1/4 cup Asian miso ginger dressing, any brand
  • 1 tbsp chili crunch oil
  • 1 tbsp everything bagel seasoning


  • Add all of the chopped veggies to a large bowl.
  • Pour the dressing over the salad and toss to coat.
  • Add the chili oil and bagel seasoning and toss everything together.
  • Top with more bagel seasoning, if desired, and serve right away or chill for 1 hour, toss again, then serve.
