Prime Time Corn, Avocado, Black Bean & Tomato Salad
Ingredients
- 2 cups Prime Time Corn
- 1-2 avocados, cut into 1/2 inch cubes
- 1 pint cherry or grape tomatoes, halved
- 1/2 cup black beans
- 1/2 cup cup spinach leaves
Dressing
- 2 tbsp olive oil
- 1/2 tsp grated lime zest
- 1 tbsp fresh lime juice
- 1/4 cup chopped cilantro
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Bring a pot of water to boiling and boil the Prime Time Corn for 3-5 minutes OR grill the corn over medium high heat for 3-5 minutes.
- Combine the Prime Time Corn, avocado, tomatoes, black beans, and spinach in a large bowl. Mix together the dressing in another bowl, pour over the salad, and gently toss to mix. Chill the salad for 1-2 hours, to allow the flavors to blend.
