Prime Time Asparagus and Red Pepper Medley
Ingredients
Balsamic Marinade
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, grated
- 1 tsp dijon mustard
- 1 tsp honey
- 1 tsp oregano
- salt and pepper, to taste
Marinated Roasted Prime Time Red Peppers, Feta and Kalamata Olives
- 1 cup roasted Prime Time Red Peppers, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup kalamata olives, finely chopped
- 2 tbsp red onion, finely chopped
Grilled Prime Time Asparagus
- 1 1/2 lbs Prime Time Asparagus, trimmed
- 1 tbsp olive oil
- salt and pepper, to taste
Instructions
- Mix all ingredients for the balsamic marinade well.
- Mix marinade into the Prime Time roasted Red Pepper, feta, kalamata olives and red onions and optionally marinate for 20 minutes to overnight, or even longer.
- Toss the Prime Time Asparagus in the oil, salt and pepper and grill over medium-high heat until tender and slightly charred.
- Serve topped with the marinated roasted Prime Time Red Pepper, feta and kalamata olives and enjoy!
