Prime Time Asparagus and Red Pepper Medley

Balsamic Marinade

  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic, grated
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 tsp oregano
  • salt and pepper, to taste

Marinated Roasted Prime Time Red Peppers, Feta and Kalamata Olives

  • 1 cup roasted Prime Time Red Peppers, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, finely chopped
  • 2 tbsp red onion, finely chopped

Grilled Prime Time Asparagus

  • 1 1/2 lbs Prime Time Asparagus, trimmed
  • 1 tbsp olive oil
  • salt and pepper, to taste


  • Mix all ingredients for the balsamic marinade well.
  • Mix marinade into the Prime Time roasted Red Pepper, feta, kalamata olives and red onions and optionally marinate for 20 minutes to overnight, or even longer.
  • Toss the Prime Time Asparagus in the oil, salt and pepper and grill over medium-high heat until tender and slightly charred.
  • Serve topped with the marinated roasted Prime Time Red Pepper, feta and kalamata olives and enjoy!
